What is a Juicy Lucy? Basically it is an inside out cheeseburger, where the cheese is stuffed between the meat patties, that oozes cheesy goodness when you bite into it. We have seen it featured several times on different food network shows, and wanted to give it a try. We actually came across a place near us with a Juicy Lucy on the menu, but they turned out to be dry, flavourless disappointments and we realized if we wanted a good juicy lucy burger, we should just make them ourselves.
I decided to try out something I normally don’t make, meatloaf. I generally find meatloaf boring and just overall not that appealing, but since I had all the ingredients, I thought I would try to change it up a bit and make it more interesting. In the end, I created a cross between meatloaf and sheppards pie.
I used to work as a cook in a bar when I was younger and jalapeño poppers were one of my favorite things on the menu. When we were doing some entertaining, we needed to come up with appetizers, so I decided to turn an old favorite into something new. I wanted to get the flavor of the poppers, without deep frying, so I decided to make a dip or filling. For the appetizers, we put some of the filling into puff pastry and baked them. They were a huge hit! Everyone loved them, one of our friends even placed an order :). This is the recipe for the jalapeño dip.
