I used to work as a cook in a bar when I was younger and jalapeño poppers were one of my favorite things on the menu. When we were doing some entertaining, we needed to come up with appetizers, so I decided to turn an old favorite into something new. I wanted to get the flavor of the poppers, without deep frying, so I decided to make a dip or filling. For the appetizers, we put some of the filling into puff pastry and baked them. They were a huge hit! Everyone loved them, one of our friends even placed an order :). This is the recipe for the jalapeño dip.
