Spinach Swiss and Bacon Quiche

I’m not sure if I like quiche better for breakfast, lunch or dinner! Quiche is great because you can throw in whatever you have in the fridge!  This combination is one of our favourites, but feel free to use what you love….no meat, extra cheese, extra veggies….go nuts!

– 8 eggs
– 1/4 cup cream (whipping cream or half and half)
– 1 pie shell
– baby spinach
– bacon
– Swiss cheese

1. Mix eggs and cream, season with salt and pepper.
2. Layer spinach, bacon and Swiss cheese into the pie shell, at least 2 times over but you can do more if you want.
3. Pour egg mixture into the pie shell.  Bake for 35-40 minutes, until lightly browned around the outside and firm in the centre.
