Jalapeño and Cream cheese Stuffed Chicken

I used to work as a cook in a bar when I was younger and jalapeño poppers were one of my favorite things on the menu. When we were doing some entertaining, we needed to come up with appetizers, so I decided to turn an old favorite into something new. I wanted to get the flavor of the poppers, without deep frying, so I decided to make a dip or filling. For the appetizers, we put some of the filling into puff pastry and baked them. They were a huge hit! Everyone loved them, one of our friends even placed an order :). This is the recipe for the jalapeño dip.
 INGREDIENTS

– 1 packet cream cheese
– 1/2 cup monetary jack cheese
– 10-12 jalapeños
– salt and pepper to taste

DIRECTIONS
Mix all ingredients in a food processor until smooth and creamy.
*You can adjust the amount of jalapeños depending how spicy you like your food. I took out about half of the seeds to reduce some of the heat but leaving in all of the flavor.

We stored the left over filling in the fridge, and it kept well. We hate wasting food, so I wanted to come up with something else I could use this filling for. I figured cheese, jalapeños and chicken all go together so why not stuff some chicken breasts and make it a dinner?  Stuffing the chicken with this filling created very moist chicken with a creamy filling that has a little spice and also has a nice crunch.

To make it all you need is chicken breasts, the jalapeño dip, flour, eggs, bread crumbs and some seasoning.

1. I set up an area for breading the chicken breasts. I season the flour and bread crumbs with paprika, cayenne pepper, oregano, salt and pepper.Bread the stuffed chicken by dipping it into the flour then egg and last the bread crumbs.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

2. Cut a little hole into the chicken and then stuff it with the filling, I used a piping bag just because it is really easy but I have just spooned it in before.

3. Heat frying pan with some olive oil until very hot. You can test the pan by dropping a few bread crumbs into the oil, if it starts to bubble the oil is hot and you are ready to cook.

4. Fry the chicken until the breading is nicely browned and crispy.
5. Transfer to baking sheet (or put the frying pan into the oven if it is oven safe) and bake for 15 minutes at 350F.
