Coconut Flan

Need a really quick and easy dessert? How about a flan?! It’s rich, creamy and delicious! We decided to use coconut milk instead of evaporated milk, and it turned out really nice. And if you need to use up the left over egg whites, why not try our Angel Food Cake recipe! 

INGREDIENTS:

  • 9 egg yolks
  • 1 can coconut milk
  • 1 can condensed milk
  • 1 cup sugar
  • 2 tbsp water

1. Pre-heat oven to 350F. Mix sugar and water in heavy bottom sauce pan and put on medium high heat. Stir until the sugar is dissolved and then let it boil until golden and caramelized, which takes around 8 minutes. Immediatlly pour into the bottom of a glass pie dish and carefully move it around to cover the bottom of the pan. Set aside.
2. Lightly mix the egg yolks then add coconut and condensed milk. Stir gently to make an evenly mixed liquid. Make sure not to stir to fast or too much as you want to avoid getting any bubbles in the mixture.
3. Strain on top of the caramel and bake in water bath for around 1 hour, until a toothpick incerted into the center comes out clean.
4. Chill for a couple hours to allow it to set
