Oh boy have we been busy! Keith proposed at the end of October, and we have been pretty distracted ever since! The holidays can be hectic, throw in wedding planning, and well… we apologize. But we have been busy in the kitchen and have some delicious recipes to share! Like this chocolate lava cake! It is a good thing that this recipe only makes 2 servings or my waistline would be in trouble. Deliciously gooey chocolate inside a rich chocolate cake with a hint of orange….Yum!! It’s sure to satisfy any chocolate craving!

Some of our favourite cupcake flavours this summer have been the lighter, fruity flavours. There are some really awesome fruit flavour combinations out there, here are some of the ones we tried.

1. Lemon cupcake with raspberry buttercream, topped with raspberry sauce, a fresh raspberry and a candied lemon slice.
2. Orange cupcake with vanilla-orange buttercream topped with a candied orange slice (not pictured)
3. Vanilla cupcake with fresh strawberry buttercream, topped with a fresh strawberry.
4. Peach cupcake with vanilla-peach buttercream, topped with a caramelized peach slice.
After posting pictures of tiramisu Keith made on Facebook, a friend commented and said I should make that my next cupcake flavor. Instantly we started looking up recipes and coming up with the best way to make these cupcakes taste like tiramisu. We tried one recipe, but thought it could use some tweaking, so after making changes to the recipe, we were pretty happy with the end product.
This week has been a busy one for cakes, and this fish cake we did has to be one of our favourite cakes that we’ve ever made.
A while ago, Keith suggested that we make the cake for his nieces 6th birthday party. Once we found out that the theme was going to be “Tangled”, we started planning out different ideas and finally decided on the very popular Tangled Tower. It started off as a small cake….but we quickly realized that we were planning a 2- ft tower and transporting this thing seemed more and more terrifying! Thankfully everything went smoothly and Hailey loved her Tangled cake.

Pineapples were on sale so I wanted to pick some up and make a dessert. We had recently made a Pineapple Upside Down Cake, so I was looking for something different to try. The grilled pineapple we used for the Hawaiian Pizza was really juicy and delicious, so I decided to go back to the BBQ. I came up with a nice, sweet dessert that pairs nicely with ice cream or is great by itself. Continue reading
Sometimes it is nice to step away from the decorating and go back to a classic cake. Pineapple upside down cake is one of those cakes. It is easy to make, inexpensive and delicious. We modified ours slightly to make an extra moist and pineappley cake.
One of my favourite flavour combinations is mint and chocolate, so after stumbling across some mint chocolate chips, it was pretty clear what our next cupcake experiment would be. I have had mint chocolate cupcakes before, but found that a lot of people make the buttercream taste like toothpaste, which is NOT what I want on a cupcake. A chocolatey cupcake with a hint of mint (think mint Girl Guide cookies) was what we were aiming for when we started and we got exactly that. Definitely no toothpaste buttercream here! Just chocolate, mint, and yum!!!
