Apple Cinnamon Yogurt Muffins

For the past few weeks, Sunday morning seems to be muffin making time at our place. We love testing out new flavours, and have been using yogurt a lot in our recipes. We were out grocery shopping and came across apple- cinnamon yogurt, and decided to use it on Sunday for our next batch of muffins. It may be a limited time flavour, so you could always use plain yogurt and increase the apple and cinnamon if you can’t find this yogurt flavour. These muffins turned out really great! Almost like eating apple pie for breakfast. Yummy 🙂


INGREDIENTS
:
– 1 egg
1 cup apple cinnamon yogurt
1/3 cup vegetable oil
2 cups flour
1/2 cup brown sugar, lightly packed
1 1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1 apple
1/4 cup brown sugar lightly packed
1/4 tsp cinnamon
1 tbsp butter

Topping (this makes enough for 24 muffins but stores well in the fridge)
– 1/2 cup packed brown sugar
– 1/3 cup flour
– 1/4 cup melted butter
– 1 tsp cinnamon

DIRECTIONS:
1. Chop apple into little pieces. Heat 1 tbsp of butter in a frying pan, once melted add the chopped apple, brown sugar and cinnamon. Cook for about 5-10 minutes, until the apples are tender.
2. Preheat oven to 350F. Mix the rest of the muffin ingredients together until just incorporated then add the cooked apple mixture and mix until just incorporated. Do not over mix. Spoon into greased or lined muffin pan. 3. Mix together the muffin topping ingredients and sprinkle over batter. There will be extra topping, you can store it in the fridge for later use.4. Bake for 15-20 minutes, until a toothpick inserted into centre comes out clean.
