Kulfi (Indian Ice Cream)

Kulfi is Indian ice cream, similar in texture to ice cream, but very different in taste. I remember eating kulfi as a kid. We didn’t have it often, but when we did it was always such a treat! It is definitely an acquired taste, specifically because of the cardamom flavour, but if you are familiar with kulfi or want to try something new, this is a very easy recipe to make at home.

Mini Dutch Oven Breakfast

Lately we have been drawn to mini-sized serving dishes. They seem to add a nice touch when plating/ presenting the meals. We recently bought ceramic mini dutch ovens and I wanted to make something, so I decided to make breakfast. I used to enjoy waking up and finding a big hearty breakfast with eggs, sausage and potatoes that my Dad would sometimes make on weekends. I wanted to bring that full meal together in one little pot and this is what I came up with. Continue reading

Decorated Sugar Cookies

I love decorating cookies! Holidays, birthdays, baby showers, weddings… doesn’t matter the theme, I love coming up with designs and creating adorable cookies. I recently had an order for a baby shower (boy) and wanted to share some pictures of my cookies. I put them on sticks because they were going to be placed in vases for the centerpieces at the party.

Jalapeño and Cream cheese Stuffed Chicken

I used to work as a cook in a bar when I was younger and jalapeño poppers were one of my favorite things on the menu. When we were doing some entertaining, we needed to come up with appetizers, so I decided to turn an old favorite into something new. I wanted to get the flavor of the poppers, without deep frying, so I decided to make a dip or filling. For the appetizers, we put some of the filling into puff pastry and baked them. They were a huge hit! Everyone loved them, one of our friends even placed an order :). This is the recipe for the jalapeño dip.

Pumpkin Muffins and Blueberry Muffins

I think muffins are one of the best things for a quick and easy on-the-go breakfast. Since I always seem to wake up late, I never have enough time to make myself breakfast. Muffins are great because there are so many possibilities and they are so easy to make.
We like to use up what we have in the fridge, and that is most often what determines the flavor/ ingredients of the meals we make. This weekend I had left over blueberries from the pancakes, and left over pumpkin pie filling from some pumpkin pies we had made. Instead of throwing out the filling that didn’t fit into the pies, we thought we would see how it worked in muffins. And of course, blueberry muffins was the obvious choice for the rest of the blueberries since blueberry muffins are by far my favorite (more specifically my Dad’s blueberry muffins which mine never seem to compare to). Hopefully I can get that recipe up here later but for now here is mine. Continue reading

Greek Yogurt and Blueberry Pancakes

Breakfast is one of my favorite meals, but I am far from a morning person so I usually just make breakfast on the weekend. It’s become a Sunday morning thing for us to wake up and make a fancy breakfast. I’m usually inspired by something I read or see during the week. This week I have been craving pancakes, which started when I saw something on TV about using whipped egg whites in pancake batter to make it fluffier. I was brain storming ideas for ingredients I could add to transform regular pancakes to amazing pancakes when Carly started talking about blueberries. I needed something else to make them fancier than just blueberry pancakes, so I went through the fridge and found some Greek Vanilla yogurt. Sounded fancy to me. Turned out to be a great addition because they were some of the best pancakes that I have ever had. Continue reading
